Speaking of quality today is not an easy task since everybody does so. To make quality is even more difficult because it means making choices: on one hand there is the industry, which demands optimization and serial production, on the other hand there is handmade processing with its slower timing and careful craftsmanship.
We have chosento be “Craftsmen” and to change the concept of “simply good” with “absolutely excellent”, we have chosen to place the product at the top of our priorities.
This means that each day we are willing to spend some extra time, in hand wrapping a ham or in salting a haunch in the artery as it was done in the past, although we know there are machines capable of doing these tasks. This means simmering some special ingredients in our home kitchen or building a special oven to smoke the ham over burning wood. These are the qualities that distinguish us from our competitors.
The quality of our products begins with the selection of fresh legs coming directly from selected slaughterhouses. The thighs selected one by one according to visual and organoleptic parameters. If a leg does not meet the quality parameters is discarded. Our hams are prepared with a large element of manual that allows us to obtain products as it once did, of bygone days.
The brines infusion are produced completely in-house. Furthermore, all stages of production are under the strict control of the company and veterinary doctors who collect all the technical information concerning the animals: where they come from, how they were fed, how they grew up and those who have been slaughtered, in a word: traceability. It is guaranteed the application of the HACCP protocol for the health and food security. The company is certified with ISO 22000 standard.
